It is the last day of a nice long holiday weekend. I haven’t been on my Facebook or Twitter pages so, in other words, I’ve got a lot accomplished.
Our Thanksgiving was wonderful! I made Turducken! Okay, not really. I did roast a turkey breast, duck and chicken separately though, giving everyone a choice of fowl for the day. Otherwise, I kept it really simple this year: steamed green beans, garlic mashed potatoes, homemade cranberry sauce, wild rice, giblet and herb gravy, and my easy French bread.
The reason for the 3 birds was simple: my stepdad likes turkey on Thanksgiving, whereas hubby and I are duck lovers. The chicken was probably overkill but it came out so nice and tender that I’m glad I made it. My parents had a huge Thanksgiving dinner at their house last Sunday also, so I thought my mom may be a little tired of turkey.
Our duck was fabulous, as always. I’ll share the recipe for that in an upcoming post. It’s so super easy and can be done in the oven or on the grill. Crispy roast duck is a favorite of ours and always a treat.
It was just my parents and us, so it ended up being a nice relaxing afternoon. My mom brought over a mixed-berry crumble for dessert and it was wonderful with coffee.
Friday, I took care of some long-overdue projects and then started my sprouting adventure, which I’ll be sharing in some upcoming posts.
I got some curtains ordered this weekend for our newly-remodeled dining room and I’m still on the hunt for our perfect new sofa.
Today, it’s football and maybe some chicken salad and beer. What’s Sunday football without beer?
I’m so thankful for my husband, my family, our health, a roof over our heads, food on our table, adorable pets, steady employment, reliable transportation. There are so many in need that I am sometimes humbled by the blessings in my life.
